Add a toBuilder method to do:

CSVFormat format = CSVFormat.EXCEL.toBuilder().withHeader("Col1", "Col2", "Col3").build();
Instead of:
CSVFormat format = CSVFormat.newBuilder(CSVFormat.EXCEL).withHeader("Col1", "Col2", "Col3").build();
