Make sure to use the type _doc in the REST documentation. (#34662)
* Replace custom type names with _doc in REST examples.
* Avoid using two mapping types in the percolator docs.
* Rename doc -> _doc in the main repository README.
* Also replace some custom type names in the HLRC docs.

== Search API
The search API is very similar to the
// {javaclient}/java-search.html[]
Java search API. The Groovy
extension allows to provide the search source to execute as a `Closure`
including the query itself (similar to GORM criteria builder):

It can also be executed using the "Java API" while still using a closure
for the query:

The format of the search `Closure` follows the same JSON syntax as the
{ref}/search-search.html[Search API] request.
